Mutton snapper are the PhD of the snapper family — reef-smart, leader-shy, and big enough (they push past 15 pounds) to embarrass light tackle on the reef. They’re also one of the best fish you’ll ever put on a grill. In the Florida Keys, summer is prime, and the bite pivots on one thing most anglers ignore: the full moon.
Meet the Mutton Snapper
Mutton snapper (Lutjanus analis) are the olive-and-pink reef snapper with the black spot on the flank and a bright red tail margin. They inhabit reefs, wrecks, and hard bottom throughout the Keys and both coasts, in anywhere from 40 to 200+ feet. Unlike their yellowtail cousins that swarm the chum slick, muttons hang lower and warier — fooling a good one is a genuine accomplishment.
The Full-Moon Spawn (Why July Is Prime)
Muttons form spawning aggregations April through August, and in the Keys the fishing peaks right around the full moons of June and July. The fish stack up on specific reef edges and humps in the days before the full moon and spawn a few days after. Time a trip to the moon and target known aggregation spots and you can get into the biggest muttons of the year. Fish the same reef a week off the moon and it can feel empty — that’s the mutton game.
How to Catch Them: Rigs & Tactics
Muttons feed on the bottom on crabs, shrimp, and small fish, and they inspect a bait before committing — so the presentation has to look natural.
- Knocker rig or long-leader Carolina rig: just enough egg sinker to hold bottom, then a long (5–8 ft) 30–50 lb fluorocarbon leader so the bait drifts naturally.
- Circle hooks (required in federal waters): 4/0–6/0 circle hooks — let them load up, don’t swing.
- Bait: live or fresh-dead ballyhoo, pilchards, pinfish, and (mutton kryptonite) live shrimp or half a crab.
- Chum to pull them up and get them competing — a mutton in a feeding pack drops its guard.
Tackle
You’re pulling hard fish off structure, so don’t go too light: a 5000–6000 spinning reel like the Penn Spinfisher VII or a Shimano Saragosa on a rod with backbone such as the Penn Carnage III, spooled with 30–50 lb braid. When a big mutton eats and turns for the reef, you need to turn its head fast.
